Comfort foods never really go out of style. They carry with them that hint of nostalgia that we love to come back to for special occasions and family gatherings. Some of our favorite comfort foods are made with unconventional ingredients, like cornflakes or crackers, that seem a little strange now but at one time were all the rage in casseroles. We just can’t quit these quirky ingredients, and for that reason, we love to serve up one of our favorite classic comfort food dishes: corn casserole with crackers.
Here’s a dish that screams comfort: a blend of canned corns mixed with heavy cream, cheese, and crumbled crackers are poured into a casserole dish and baked to creamy perfection. Buttery or salty snack crackers add savory flavor and great texture, to contrast with the sweetness of the corn and creaminess from the cheese. But the real adornment comes with a layer of crushed crackers that garnish the top of the casserole once it comes out bubbly and golden from the oven. When a dish like this is on the menu, we know we’re in for a scoop of mmm-mmm-mmmm. Sure, it’s a little bit retro, but these types of throw-back dishes are still relevant and undeniably delicious.
