Kitchen Equipment You’ll Need

  • Plastic bag with zip-type seal
  • Large serving bowl
  • Roasting pan with rack
  • Meat thermometer
  • Saucepan
  • Brush or spoon for glazing

Ingredients

  • 1/4 cup soy sauce
  • 1 cup Coca-Cola
  • 1/2 cup dark brown sugar
  • 2 tablespoons Dijon mustard
  • 3 tablespoons oil
  • 2 tablespoons Worcestershire sauce
  • 1/3 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon dry mustard
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon ginger
  • 1 teaspoon thyme, crushed
  • 5 pounds pork loin roast, boned & rolled

Directions

  1. Combine all the ingredients except for the meat to form a marinade.
  2. Set the pork roast in a plastic bag with a zip-type seal, pour in the marinade, and seal the bag.
  3. Place the plastic bag in a serving bowl large enough to steady the roast and keep the marinade from spreading away.
  4. Let stand for 24 hours or overnight in the refrigerator, patting and turning the bag every few hours.
  5. Remove roast from marinade and discard the marinade.
  6. Place roast, fat side up, on a rack in a roasting pan. Insert a meat thermometer into the thickest part.
  7. Roast in a slow 325-degree preheated oven until the thermometer registers 175 degrees. Allow 30 to 40 minutes per pound for roasting.
  8. During the last 1/2 hour of cooking, brush on the glaze. Optionally, cook on the grill or in a smoker.
  9. Remove from the oven, cover with a foil tent, and let rest for 15 minutes before slicing.

Tips for Success

  • Turn the bag every few hours to ensure even marination.
  • Let the meat rest after cooking to seal in juices.

Additional Tips or Variations

For an even more tender roast, consider slow-roasting at a lower temperature of 250 – 275 degrees and allow almost twice as long to cook.

Glaze

  • 1 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon dry mustard
  • 2 tablespoons butter
  • 1/3 cup balsamic vinegar
  • 2/3 cup Coca-Cola
  • Sea salt and fresh ground pepper

Mix together all ingredients in a saucepan; simmer and stir to thicken. Brush or spoon glaze on meat frequently during cooking. Serve any remaining sauce with the sliced pork if desired.

  1. Really? 175 degrees internal temperature? I would think that the meat would be tough and dry at that temp….I only cook mine to 140 then let it sit until it reaches 145 …..meat is moist, tender and done
