Ingredients:
1 1/2 lb thin skin potatoes
1 large red onion
2 TBL olive oil
½ tsp paprika powder
½ tsp dried rosemary
Sea salt also pepper
4 Pork chops, 1 inch thick aprox
2 TBL olive oil
4 cloves of garlic
1 tsp Worcestershire sauce
½ tsp of ground cumin
1 tsp cayenne pepper
Lime, juice and a few gratings of flavor
1 tsp salt
½ tsp pepper
Directions:
First mix together olive oil, grated garlic cloves, Worcestershire sauce, cumin, cayenne pepper, paprika, lemon peel, juice, and salt and pepper in a small bowl.
Rub onto chops.
Store in fridge for up to 8 hours. Take out half of an hour before cooking.
Preheat the oven 400°F.
Clean and cut potatoes as needed.
Cut onions into slices.
Pour 2 tablespoons of olive oil, paprika, rosemary, and a pinch of salt and pepper over the vegetables.
Rub properly with your hands to coat with the spice and oil mixture.
Arrange chops, potatoes and onions on the tray in a single layer.
Bake for 15 to 20 mins or till absolutely cooked through.
